Healthy Lunch Ideas: Orange Vegetable Soup Recipe

When you’re rushing around all day, I know how hard it can be stop and have something healthy for lunch (never mind take time out to prepare it). Sometimes is just seems much easier to grab a quick snack.

But having something nutritious at lunchtime can make the world of difference to the rest of your day, giving you more energy to keep going. And help prevent that mid-afternoon slump – which can be made worse by too much junk or sugar.

Orange Vegetable Soup is one of my favourite soups. The colour and flavour is so perfect for autumn. It’s warming, comfort food that is simple to prepare.

The quantities in this recipe will probably give you around eight servings. So you can keep a little stock of them. Freeze them in batches and just defrost a bowlful whenever you want.

Chopped vegetables for Orange Vegetable Soup - healthy lunch ideas from Mocha


1kg pumpkin
4 carrots
1 sweet potato
1 – 2 sprigs of flat parsley
1.5 litres vegetable stock
salt and pepper


Wash, peel and roughly dice all the vegetables.

Place in large pot and cover with the vegetable stock

Wash the parsley, tear into pieces and add to the soup pot.

Bring to the boil. Cover, and simmer for approximately 20 minutes. Or until the vegetables are soft.

Blend the soup with a hand blender to create a rich, creamy consistency. If you don’t like the soup too thick, just add a little bit more hot water.

Season with salt and pepper to taste. If you want a little more kick you can also add a bit of cayenne pepper.

If you want a bit of a crunch, you can top the soup with some mixed seeds. Or serve with a crusty roll.

Then sit down for a few minutes and enjoy a delicious hot bowl of soup.
